Together, that's more than 20 years of hands-on food & beverage experience behind every engagement.
Gautam V Nichani
Gautam is the culinary and operations backbone of 83 Hospitality. With a degree in Economics & Marketing from the University of Madras, a certificate in Food Technology & Bakery Sciences, and formal hotel-management training in Mumbai, he has spent his career where great food meets operations at scale.
His path runs through some of India's most demanding kitchens — the Taj Flight Kitchen in Mumbai, the Taj at Gateway of India, and a sous-chef role at The Orchid. As Production Manager at Cakes N Bakes he ran central-kitchen operations built on quality control and standardisation, set up food-court branches, and handled franchise management and B2B supply. He later led operations at La Chocolate and Delhi Highway, and launched FNP Cakes in Chennai — an e-commerce bakery brand supplying seven outlets across the city and its suburbs.
It's this depth in bakery, confectionery and central-kitchen production that makes those our specialty.
Kaleel Rahman
Kaleel has worked in the restaurant industry since 2020, helping restaurants across Chennai sharpen their menus, costs, operations and profitability. He co-founded 83 Hospitality around a simple observation: the restaurants that thrive aren't always the ones with the highest sales — they're the ones who understand their numbers.
Too many owners, brilliant at food and service, were quietly losing money — without the tools to control food cost, price menus correctly, decode delivery-platform commissions, or turn POS reports into decisions. Because good consulting is expensive, Kaleel built FixMenu — a "pocket restaurant consultant" that does that analytical work affordably and instantly.
He is also a published author — two books on the business of running restaurants, and one on the common mistakes owners make in any business.
